Ingredients
  

For the Beef Coating
  • 360 g thin-cut sirloin steak Ribeye, flank, or skirt steak are alternatives.
  • 1 small egg Can also use any smaller egg or just an egg white.
  • 4 tbsp cornflour (cornstarch) Potato starch is a gluten-free substitute.
  • ¼ tsp salt Adjust based on dietary needs.
  • ¼ tsp black pepper
  • tsp white pepper
For Sautéing
  • 4 ½ tbsp sunflower oil Canola or grapeseed oil works too.
  • 1 medium onion Substitute with shallots for a milder taste.
  • 1 red chili Choose a milder variety or omit seeds for less heat.
  • 1 tsp minced ginger Fresh is ideal, but powdered works if needed.
  • 3 cloves garlic Garlic powder can also be used at ½ tsp per clove.
For the Chinese Garlic Sauce
  • 2 tbsp rice vinegar White vinegar can be used as a substitute.
  • 3 tbsp dark soy sauce Regular soy sauce for a lighter profile.
  • 2 tbsp tomato puree Ketchup can be substituted in moderation.
  • 6 tbsp caster sugar Consider brown sugar or coconut sugar.
  • 2 tbsp tomato ketchup Can be omitted if reducing sugars.
  • 2 tbsp sweet chili sauce Homemade mix can replace this.

Method
 

Cooking Steps
  1. Prepare the Steak: Place thin-cut sirloin steak strips in a mixing bowl. Add egg, cornflour, salt, black and white pepper. Toss until beef is evenly coated.
  2. Cook the Beef: Heat 3 tbsp of sunflower oil in a large frying pan or wok over high heat. Fry coated beef in batches for 5-6 minutes until dark brown and crispy; drain on kitchen paper.
  3. Sauté Aromatics and Sauce: In the same pan, reduce heat and add 1 tbsp oil. Sauté onion for about 2 minutes, then add red chili, ginger, and garlic. Cook for 30 seconds, then mix in rice vinegar, soy sauce, tomato puree, sugar, ketchup, and sweet chili sauce. Simmer for 2-3 minutes.
  4. Combine and Serve: Return crispy beef to the pan, toss in the sauce, and heat together for another 1-2 minutes. Serve hot with rice or noodles.
