Preparation
- Season chicken cutlets with salt and pepper. Coat in panko breadcrumbs and parmesan.
- Heat oil in a skillet and shallow-fry the chicken for 4-5 minutes on each side until golden brown.
- Blend sundried tomatoes in a blender until smooth for the spread.
- Slice focaccia and spread sundried tomato mixture on one side. Add fried chicken cutlet and cheddar cheese.
- Optional: Grill the assembled sandwich in the skillet until the bread is golden and cheese is melted.
