How to Make All-in-One Crispy Baked Tacos
- Preheat the oven to 180°C (350°F).
- Brush both sides of the tortillas with extra virgin olive oil, then arrange them on a baking sheet.
- Mix together the black beans, cherry tomatoes, red onion, chipotle chillies, corn, and season with salt and pepper in a large mixing bowl.
- Spoon the mixture into the brushed tortillas and gently fold them over.
- Bake the filled tortillas for 18–20 minutes until crispy and golden brown.
- Prepare the lime yoghurt while the tacos are baking by mixing Greek yoghurt, lime juice, lime rind, crushed garlic, salt, and pepper in a bowl.
- Serve the warm tacos topped with chopped avocado, fresh coriander, lime cheeks, and a generous dollop of the lime yoghurt sauce.
