All-in-one crispy baked tacos are a delicious and easy weeknight meal that combines smoky black beans, fresh corn, and zesty lime yoghurt.

Ingredients
  

For the Tacos
  • 8 pieces flour tortillas Substitute with corn tortillas for a gluten-free option.
  • 2 tablespoons extra virgin olive oil For brushing tortillas.
  • 400 grams cherry tomatoes Swappable with any ripe tomatoes.
  • 0.5 pieces red onion, finely sliced Can be replaced with white onion.
  • 2 cans black beans, rinsed and drained Pinto beans can be used as a substitute.
  • 0.25 cup chipotle chillies in adobo sauce, chopped Adjust according to spice preference.
  • 1.5 cups fresh corn kernels Canned corn can be used if fresh isn’t available.
  • sea salt and cracked black pepper Season to taste.
For the Toppings
  • 1 large avocado, chopped Guacamole is a great substitute.
  • 1 cup coriander (cilantro) leaves Optional.
  • lime cheeks, to serve Serve with wedges of lime on the side.
For the Lime Yoghurt
  • 1 cup Greek yoghurt Coconut yoghurt is a vegan alternative.
  • 2 tablespoons lime juice
  • 1 teaspoon finely grated lime rind
  • 1 small clove garlic, crushed For best taste.

Method
 

How to Make All-in-One Crispy Baked Tacos
  1. Preheat the oven to 180°C (350°F).
  2. Brush both sides of the tortillas with extra virgin olive oil, then arrange them on a baking sheet.
  3. Mix together the black beans, cherry tomatoes, red onion, chipotle chillies, corn, and season with salt and pepper in a large mixing bowl.
  4. Spoon the mixture into the brushed tortillas and gently fold them over.
  5. Bake the filled tortillas for 18–20 minutes until crispy and golden brown.
  6. Prepare the lime yoghurt while the tacos are baking by mixing Greek yoghurt, lime juice, lime rind, crushed garlic, salt, and pepper in a bowl.
  7. Serve the warm tacos topped with chopped avocado, fresh coriander, lime cheeks, and a generous dollop of the lime yoghurt sauce.

Notes
