How to Make Vegan Tonkotsu Ramen
- Soak the kombu and shiitake mushrooms in vegetable broth for about 30 minutes.
- In a blender, combine the soaked kombu, shiitake mushrooms, soy or oat milk, sesame paste, and nutritional yeast. Blend until smooth.
- Pour the blended mixture into a saucepan and bring to a gentle simmer. Cook for 15-20 minutes and strain if desired.
- While the broth simmers, cook the ramen noodles according to package instructions. Drain and set aside.
- In serving bowls, place the cooked noodles and ladle the hot broth over them. Top with crispy tofu katsu and preferred toppings.
- Serve immediately and enjoy!
