For the Cream Sauce
  • 1 cup heavy cream Use half-and-half for a lighter version.
  • 1/2 cup dry white wine Vegetable broth can be used as a non-alcoholic alternative.
  • 1 cup freshly grated Parmesan cheese Nutritional yeast is a dairy-free alternative.

Method
 

Preparation Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice the onions into ¼ inch thick rounds and arrange them on a lined baking sheet. Drizzle with olive oil, then season with salt and pepper. Roast for 15 minutes or until softened.
  3. Combine heavy cream and dry white wine in a saucepan over medium heat. Heat gently until simmering, then remove from heat.
  4. Increase the oven temperature to 450°F (232°C).
  5. Transfer the roasted onions to a shallow baking dish, pour the warm cream mixture over, and sprinkle Parmesan cheese on top.
  6. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5 minutes until caramelized and bubbly.
