- Preheat your oven to 375°F (190°C).
- Slice the onions into ¼ inch thick rounds and arrange them on a lined baking sheet. Drizzle with olive oil, then season with salt and pepper. Roast for 15 minutes or until softened.
- Combine heavy cream and dry white wine in a saucepan over medium heat. Heat gently until simmering, then remove from heat.
- Increase the oven temperature to 450°F (232°C).
- Transfer the roasted onions to a shallow baking dish, pour the warm cream mixture over, and sprinkle Parmesan cheese on top.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5 minutes until caramelized and bubbly.
