Ingredients
  

For the Chicken
  • 1 pound Boneless Chicken Breasts
  • 2 tablespoons Olive Oil can substitute with vegetable oil or butter
  • 1 teaspoon Paprika smoked paprika boosts flavor
  • 1 teaspoon Garlic Powder fresh garlic can be substituted
  • 1 teaspoon Onion Powder finely chopped onions work well too
  • 1 teaspoon Dried Oregano thyme serves as a lovely alternative
  • 1/4 cup Peri Peri Sauce sriracha is a great stand-in if needed
  • 1 tablespoon Lemon Juice lime juice also works
For the Sauce
  • 1 cup Heavy Cream coconut milk lightens it up beautifully
  • 1 cup Chicken Broth vegetable broth makes it vegetarian-friendly
  • 2 tablespoons Butter optional if you want to lighten the dish
  • to taste Salt and Black Pepper adjust to your taste preference
For the Rice
  • 1 cup Long Grain White Rice jasmine or basmati rice can also shine here
  • 2 cups Water necessary for cooking the rice

Method
 

Cooking Steps
  1. Heat a large skillet over medium heat and drizzle in the olive oil, letting it shimmer.
  2. Generously coat the boneless chicken breasts with paprika, garlic powder, onion powder, oregano, salt, and black pepper.
  3. Place the seasoned chicken in the hot skillet, cooking for 6-7 minutes on each side until golden brown and fully cooked.
  4. Once cooked, remove the chicken from the skillet and let it rest on a plate.
  5. In the same skillet, combine the peri peri sauce, heavy cream, chicken broth, and lemon juice. Stir well.
  6. Simmer the sauce for 3-4 minutes, stirring occasionally until it thickens.
  7. Stir in the butter until it melts completely into the sauce, then return the chicken to the skillet.
  8. Simmer the chicken in the sauce for another 3-4 minutes.
  9. While the sauce simmers, rinse the long grain white rice under cold water, then cook it in a separate pot with water.
  10. Fluff the rice gently with a fork when done.
  11. Plate the creamy peri peri chicken over the fluffy rice and serve.
