- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, fry the bacon over medium heat until crispy, about 8-10 minutes. Transfer the bacon to a paper towel-lined plate to drain excess fat.
- Drain the excess bacon fat from the skillet, leaving about 1 tablespoon. Melt the butter in the skillet, add broccoli florets, salt, and pepper, then cook for about 6 minutes, stirring occasionally, until the broccoli is tender yet vibrant.
- Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to let it brown.
- Pour in the heavy whipping cream, add the cream cheese, stock, half of the grated parmesan and mozzarella, and paprika. Let it simmer for 3-4 minutes until everything is well blended and the sauce is smooth.
- Mix the crispy bacon back into the creamy mixture, stirring until evenly coated and combined.
- Sprinkle the remaining cheese over the top. Transfer the skillet to the oven and bake for 15 minutes, or until bubbly. Broil for an additional 2 minutes for a crispier top if preferred.
- Remove from the oven and let it cool for a minute. Sprinkle with extra cracked pepper and fresh chopped parsley before serving.
