  • 2 tablespoons Butter Melted
  • 4 cloves Minced Garlic
  • 1 medium Yellow Onion Diced
  • 2 leaves Bay Leaves Remove before blending
  • 1 teaspoon Thyme Fresh or dried
  • 4 cups Chicken Broth Or vegetable broth
  • 1 cup Heavy Whipping Cream Or half-and-half
For the Croutons
  • 2 tablespoons Olive Oil Or butter
  • 1 tablespoon Basil Or Italian seasoning
  • 1 teaspoon Salt Adjust to taste
For Serving
  • 1 cup Grated Parmesan Or nutritional yeast for vegan option

Method
 

Cooking Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Cube the French bread into 1-inch pieces. In a small bowl, melt the butter and mix in the minced garlic, then coat the bread cubes. Spread them on a baking sheet.
  3. Bake the bread cubes for about 15 minutes, or until golden brown and crispy.
  4. Sauté onions in a large pot over medium-high heat with olive oil, thyme, bay leaves, salt, and black pepper for 7-8 minutes until lightly browned.
  5. Add more minced garlic and sauté briefly, then pour in the chicken broth and bring to a boil. Reduce to a simmer for 15 minutes, removing bay leaves afterward.
  6. Stir in cubed French bread and heavy cream, allowing the bread to absorb the broth for about 5 minutes.
  7. Blend the mixture with an immersion blender until smooth, adding grated Parmesan cheese just before serving.
