Preparation Steps
- Preheat oven to 375°F (190°C).
- Pat chicken thighs dry with paper towels, season with salt and pepper.
- In a skillet, heat butter over medium heat. Add chicken skin-side down and sear for 4-5 minutes until golden brown.
- Flip chicken to brown the other side, cooking for about 3 minutes. Transfer chicken to a plate to rest.
- In the same skillet, add sliced onions and apples. Sauté gently for about 5 minutes until softened.
- Pour in chicken broth, scraping the bottom of the pan to capture browned bits.
- Nestle chicken back into skillet, pour heavy cream over, and sprinkle fresh thyme on top.
- Transfer skillet to preheated oven and bake for 30-35 minutes until bubbly and chicken reaches 165°F (74°C).
- Remove from oven, let rest for 5 minutes before serving.
