Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C).
  2. Pat chicken thighs dry with paper towels, season with salt and pepper.
  3. In a skillet, heat butter over medium heat. Add chicken skin-side down and sear for 4-5 minutes until golden brown.
  4. Flip chicken to brown the other side, cooking for about 3 minutes. Transfer chicken to a plate to rest.
  5. In the same skillet, add sliced onions and apples. Sauté gently for about 5 minutes until softened.
  6. Pour in chicken broth, scraping the bottom of the pan to capture browned bits.
  7. Nestle chicken back into skillet, pour heavy cream over, and sprinkle fresh thyme on top.
  8. Transfer skillet to preheated oven and bake for 30-35 minutes until bubbly and chicken reaches 165°F (74°C).
  9. Remove from oven, let rest for 5 minutes before serving.
