Preparation
- Preheat your oven to 350°F (175°C).
- Season the chicken lightly with salt and pepper. Bake in the preheated oven for 20-25 minutes until cooked through and juices run clear.
- Sauté bell peppers and onions in a greased skillet over medium heat for 5-7 minutes, until they become tender. Add canned tomatoes and green chilies for about 2 minutes before transferring everything to a large bowl.
- Chop the cooked chicken into bite-sized pieces. Combine with the sautéed veggies in the bowl, mixing well to incorporate flavors.
- Blend together taco seasoning, cream cheese, half of the shredded cheese, and heavy cream in the mixture.
- Transfer the mixture to a casserole dish, spreading evenly. Top with the remaining shredded cheese, and bake for 30-35 minutes until bubbly and golden brown.
