  • 2 cups Frozen diced butternut squash
  • 1 cup Fresh chopped tomatoes
  • 1 medium Yellow onion sliced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Dried thyme
For the Pasta
  • 8 oz Pasta (your choice)
  • 1/3 cup Reserved pasta water remember to save it before draining!

How to Make Butternut Squash Pasta Sauce
  1. Preheat oven to 450°F and line a baking sheet with parchment paper.
  2. Spread frozen diced butternut squash, fresh chopped tomatoes, and half a sliced yellow onion on the baking sheet.
  3. Drizzle olive oil over the veggies and sprinkle with salt, black pepper, and dried thyme.
  4. Mix well to ensure even coverage of oil and seasonings.
  5. Bake for 20 minutes or until the veggies are tender and slightly caramelized.
  6. Cook your pasta according to package instructions (about 8-10 minutes).
  7. Scoop out 1/3 cup of reserved pasta water before draining the cooked pasta.
  8. Blend the roasted veggies with the reserved pasta water until smooth and creamy.
  9. Pour the sauce over the drained pasta and toss well to coat evenly. Serve hot.
