How to Make Butternut Squash Pasta Sauce
- Preheat oven to 450°F and line a baking sheet with parchment paper.
- Spread frozen diced butternut squash, fresh chopped tomatoes, and half a sliced yellow onion on the baking sheet.
- Drizzle olive oil over the veggies and sprinkle with salt, black pepper, and dried thyme.
- Mix well to ensure even coverage of oil and seasonings.
- Bake for 20 minutes or until the veggies are tender and slightly caramelized.
- Cook your pasta according to package instructions (about 8-10 minutes).
- Scoop out 1/3 cup of reserved pasta water before draining the cooked pasta.
- Blend the roasted veggies with the reserved pasta water until smooth and creamy.
- Pour the sauce over the drained pasta and toss well to coat evenly. Serve hot.
