How to Make Creamy Apple Baked Oatmeal
  1. Blend the Medjool dates, non-dairy milk, water, vanilla extract, and a pinch of salt until smooth. If the mixture is too thick, add a little more liquid to achieve a pourable consistency, then set aside.
  2. Take the cold coconut milk and whip it until fluffy in texture. Next, gently fold in maple syrup and a splash of vanilla for added flavor, then place in the fridge to chill.
  3. Set your oven to 375°F (190°C) while you prepare the rest of your ingredients.
  4. Combine the ground flax seed with water, and allow it to rest for about 5 minutes until thickened—this will act as your egg substitute!
  5. In a large bowl, combine the flax egg, rolled oats, diced apples, chopped peanuts, baking powder, ground cinnamon, vanilla extract, maple syrup, and non-dairy milk. Stir until everything is well incorporated.
  6. Pour the oatmeal mixture into a baking dish or individual ramekins, spreading it out evenly for even cooking.
  7. Place in the oven and bake for 40 minutes if using a larger dish, or 30 minutes for ramekins. Look for a golden edge to know it's done!
  8. Let the baked oatmeal cool for about 15 minutes to allow it to set. Top with the luscious caramel sauce and any additional toppings before diving in!
