How to Make Creamy Apple Baked Oatmeal
- Blend the Medjool dates, non-dairy milk, water, vanilla extract, and a pinch of salt until smooth. If the mixture is too thick, add a little more liquid to achieve a pourable consistency, then set aside.
- Take the cold coconut milk and whip it until fluffy in texture. Next, gently fold in maple syrup and a splash of vanilla for added flavor, then place in the fridge to chill.
- Set your oven to 375°F (190°C) while you prepare the rest of your ingredients.
- Combine the ground flax seed with water, and allow it to rest for about 5 minutes until thickened—this will act as your egg substitute!
- In a large bowl, combine the flax egg, rolled oats, diced apples, chopped peanuts, baking powder, ground cinnamon, vanilla extract, maple syrup, and non-dairy milk. Stir until everything is well incorporated.
- Pour the oatmeal mixture into a baking dish or individual ramekins, spreading it out evenly for even cooking.
- Place in the oven and bake for 40 minutes if using a larger dish, or 30 minutes for ramekins. Look for a golden edge to know it's done!
- Let the baked oatmeal cool for about 15 minutes to allow it to set. Top with the luscious caramel sauce and any additional toppings before diving in!
