- In a large pot, heat a splash of olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and sliced mushrooms. Sauté for another 3-4 minutes until tender.
- Pour in the vegetable broth and bring it to a gentle boil.
- Break the lasagna noodles into bite-sized pieces, then add them to the pot. Cook according to package instructions.
- Once noodles are soft, lower heat and mix in the Alfredo sauce. Stir until well combined.
- Add the spinach and stir until wilted, about 2 minutes.
- Taste and adjust the seasoning with seasoned salt and pepper. Ladle into bowls and finish with Parmesan cheese.
