Preparation and Cooking
- Season the salmon fillets with salt, garlic powder, and Cajun seasoning. Chop the garlic and onion, and grate the Parmesan. Shuck the corn and cut the kernels off.
- Heat oil and butter in a skillet over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown. Remove and set aside.
- Lower heat to medium, add garlic and onion to the skillet. Cook for about 2 minutes until fragrant. Season with salt, pepper, and thyme.
- Add orzo and corn kernels, toasting for about 1 minute.
- Pour in broth and bring to a gentle boil. Reduce heat and simmer uncovered for around 10 minutes, stirring frequently.
- Stir in Parmesan, heavy cream, and lemon juice. Simmer for an additional 2 minutes.
- Gently place the salmon back into the skillet until heated through. Garnish with thyme, black pepper, and chili flakes if desired.
