For the Salmon
  • 4 fillets Salmon Skin-on for moisture
  • 2 tablespoons Oil Substitute any cooking oil if needed
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Garlic Powder Or use fresh garlic
  • 1 tablespoon Cajun Seasoning Adjust based on spice preference
For the Orzo
  • 1 cup Orzo Or substitute with small pasta
  • 1 ear Corn on the Cob Fresh corn is recommended
  • 2 cloves Garlic Chopped
  • 1 small Onion Chopped
  • 4 cups Broth Chicken or vegetable
For the Creamy Sauce
  • 1 cup Heavy Cream At least 20% fat
  • 1/2 cup Parmesan Freshly grated
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1 teaspoon Thyme Fresh preferred
  • 1/2 teaspoon Chili Flakes Optional

Method
 

Preparation and Cooking
  1. Season the salmon fillets with salt, garlic powder, and Cajun seasoning. Chop the garlic and onion, and grate the Parmesan. Shuck the corn and cut the kernels off.
  2. Heat oil and butter in a skillet over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. Lower heat to medium, add garlic and onion to the skillet. Cook for about 2 minutes until fragrant. Season with salt, pepper, and thyme.
  4. Add orzo and corn kernels, toasting for about 1 minute.
  5. Pour in broth and bring to a gentle boil. Reduce heat and simmer uncovered for around 10 minutes, stirring frequently.
  6. Stir in Parmesan, heavy cream, and lemon juice. Simmer for an additional 2 minutes.
  7. Gently place the salmon back into the skillet until heated through. Garnish with thyme, black pepper, and chili flakes if desired.
