  • 1 can Low-fat Cream of Mushroom Soup 10.5 oz; can be substituted with cream of celery.
  • 1/2 cup Whole Milk or Unsweetened Plant-Based Milk Any unsweetened milk can be used as a dairy alternative.
For the Cheesy Layer
  • 1/2 cup Shredded Cheddar or Gruyère Cheese Feel free to swap with your favorite melting cheese or non-dairy cheese.
For the Crunchy Topping
  • 1/4 cup Breadcrumbs Regular or gluten-free breadcrumbs will work.
  • 1 tablespoon Melted Butter Helps breadcrumbs brown.
For Seasoning
  • 1/2 teaspoon Dried Thyme
  • 1/4 teaspoon Garlic Powder
  • Salt and Freshly Ground Black Pepper Season to taste.

Method
 

Directions
  1. Preheat your oven to 375°F. Grease a medium baking dish.
  2. Steam or blanch your fresh mixed vegetables for 3 to 4 minutes until they are just tender; drain well.
  3. In a large mixing bowl, combine your prepared vegetables with the cream of mushroom soup, milk, shredded cheese, thyme, garlic powder, salt, and pepper.
  4. Transfer the vegetable mixture into your greased baking dish, spreading it out evenly.
  5. Mix the breadcrumbs with melted butter until well combined, then sprinkle generously over the vegetable filling.
  6. Bake uncovered for 25 to 30 minutes until golden-brown on top.
  7. Allow to rest for about 5 minutes before serving.
