Baking Instructions
  1. Preheat the Oven: Set your oven to 200°C (400°F) and prepare a large baking tray lined with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the plain flour, icing sugar, desiccated coconut, baking powder, and salt.
  3. Incorporate Butter: Grate the cold unsalted butter into the dry mixture. Blend with your fingertips or a pastry cutter until crumbly.
  4. Mix Wet Ingredients: Add lime zest, lime juice, canned coconut milk, and milk to the bowl. Stir until a sticky dough forms.
  5. Shape the Dough: On a lightly floured surface, press the dough into a round about 1 inch thick. Cut into 8 triangles.
  6. Bake: Transfer the scones to your prepared tray, brush them with thickened cream, and bake for 16-18 minutes.
