- Preheat the oven to 350°F (175°C) and line a muffin tin with liners or spray it with non-stick spray.
- Whisk together flour, sugar, baking powder, and salt in a mixing bowl until thoroughly combined.
- Combine milk, melted butter, egg, and vanilla in another bowl. Stir until well mixed.
- Stir the wet ingredients into the dry ingredients until just combined.
- Mix together cinnamon and sugar in a separate bowl for the filling.
- Fill muffin cups halfway with batter, then add a spoonful of the cinnamon-sugar mixture in the center.
- Top with the remaining batter.
- Bake for 20-25 minutes or until the muffins turn golden brown and a toothpick inserted comes out clean.
