- In a small mixing bowl, mix together the peanut butter, egg, cocoa powder, salt, monk fruit sweetener, and 1 tablespoon of chocolate chips. If the mixture feels thick, thin it out with 1-2 teaspoons of water until it's easy to stir.
- Preheat your mini waffle maker according to the manufacturer's instructions. Spray it lightly with oil to prevent sticking.
- Carefully pour half of the brownie batter into the preheated waffle maker. Sprinkle half of the remaining chocolate chips on top.
- Close the waffle maker and cook for about 2-3 minutes, until the steam stops.
- Remove the first waffle and repeat the process with the remaining batter and chocolate chips.
