- Heat oil in a non-stick saucepan over medium heat, then add finely chopped garlic. Fry until golden brown, drain the garlic, and set it aside for later use.
- In a separate saucepan, bring water to a boil and add the pork ribs. Let them boil for 5 minutes, then rinse the ribs under cold water to remove any impurities.
- In the same saucepan, return the rinsed ribs and add ginger, soy sauce, oyster sauce, sugar, rice wine, and 2 cups of water. Cover and let it simmer for about 60 minutes.
- Increase the heat, remove the lid, and let the liquid evaporate, thickening the sauce. Stir in the reserved oil and toss the ribs until they're beautifully browned and sizzling for about 5-10 minutes.
- Finally, mix in the chili powder and the fried garlic. Serve your delicious ribs hot and enjoy their rich, spicy flavor!
