Ingredients

For the Marinade
  • 4 cloves Garlic Adds aromatic flavor; using fresh garlic will enhance the taste.
  • 1 inch Ginger Fresh ginger lends warmth and spice; in a pinch, powdered ginger works well.
  • 1/2 cup Soy Sauce Provides umami flavor; opt for low-sodium for a healthier choice.
  • 1/4 cup Oyster Sauce Adds a rich, seafood-like taste; it's optional.
  • 1/4 cup Rice Wine Enhances depth of flavor; cooking sherry can serve as a substitute.
For the Ribs
  • 2 kg Pork Ribs Choose short ribs cut into 5-10 cm pieces.
  • 2 tablespoons Oil Used for frying garlic until golden; light olive oil can be a suitable alternative.
  • 4 cups Water Essential for braising; feel free to substitute with chicken or vegetable broth.
For the Seasoning
  • 1 tablespoon Chili Powder Adds that spicy kick; adjust to your spice preference.
  • 2 tablespoons Sugar Balances the savory flavors; brown sugar can replace white sugar.

Equipment

  • non-stick saucepan
  • separate saucepan

Method

Preparation Steps
  1. Heat oil in a non-stick saucepan over medium heat, then add finely chopped garlic. Fry until golden brown, drain the garlic, and set it aside for later use.
  2. In a separate saucepan, bring water to a boil and add the pork ribs. Let them boil for 5 minutes, then rinse the ribs under cold water to remove any impurities.
  3. In the same saucepan, return the rinsed ribs and add ginger, soy sauce, oyster sauce, sugar, rice wine, and 2 cups of water. Cover and let it simmer for about 60 minutes.
  4. Increase the heat, remove the lid, and let the liquid evaporate, thickening the sauce. Stir in the reserved oil and toss the ribs until they're beautifully browned and sizzling for about 5-10 minutes.
  5. Finally, mix in the chili powder and the fried garlic. Serve your delicious ribs hot and enjoy their rich, spicy flavor!
