Chickpea Flour Method
- In a mixing bowl, combine chickpea flour with 1 cup of water. Whisk until smooth and free of lumps.
- In a saucepan, bring the remaining water to a boil.
- Slowly stir the chickpea mixture into the boiling water while constantly whisking.
- Reduce the heat and let the mixture simmer on low for about 5-6 minutes, continuously whisking.
- Once thickened, pour the chickpea mixture into molds and smooth the top with a spatula.
- Allow the chickpea tofu to cool and set in the refrigerator for a few hours.
Dried Chickpeas Method
- Soak dried chickpeas overnight.
- Blend soaked chickpeas with fresh water until smooth.
- Strain the liquid using a nut-milk bag or fine mesh strainer.
- Simmer the strained liquid on low heat for about 20 minutes, stirring often.
- Pour the silky mixture into greased molds and cool to set.
