Ingredients
  

For the Chickpea Flour Method
  • 1 cup Chickpea Flour The essential base for a firm texture
  • 1 cup Water Adjust volume for desired firmness
  • 1 teaspoon Salt Optional; enhances flavor
  • 1 teaspoon Turmeric Optional; adds color and earthiness
For the Dried Chickpeas Method
  • 1 cup Dried Chickpeas Soak overnight for best texture
  • 1 cup Water Used to blend and cook

Method
 

Chickpea Flour Method
  1. In a mixing bowl, combine chickpea flour with 1 cup of water. Whisk until smooth and free of lumps.
  2. In a saucepan, bring the remaining water to a boil.
  3. Slowly stir the chickpea mixture into the boiling water while constantly whisking.
  4. Reduce the heat and let the mixture simmer on low for about 5-6 minutes, continuously whisking.
  5. Once thickened, pour the chickpea mixture into molds and smooth the top with a spatula.
  6. Allow the chickpea tofu to cool and set in the refrigerator for a few hours.
Dried Chickpeas Method
  1. Soak dried chickpeas overnight.
  2. Blend soaked chickpeas with fresh water until smooth.
  3. Strain the liquid using a nut-milk bag or fine mesh strainer.
  4. Simmer the strained liquid on low heat for about 20 minutes, stirring often.
  5. Pour the silky mixture into greased molds and cool to set.
