  • 1.5 tablespoons Pesto Store-bought versions save time.
For the Toppings
  • 4 ounces Part Skim Mozzarella Cheese For a melty texture.
  • 1 cup Boneless Skinless Chicken Breast Shredded and cooked; leftover grilled chicken works.
  • 2 small Peaches Sliced thin; nectarines can be substitutes.
Finishing Touches
  • 1 cup Arugula Adds a refreshing kick post-baking.
  • Fresh Ground Black Pepper
  • Torn Basil Leaves
  • Balsamic Glaze For drizzling.

Method
 

Preparation
  1. Preheat the oven to 475°F. Prepare a greased baking sheet.
  2. Shape the pizza dough into a 10-12 inch circle and place on the baking sheet.
  3. Mix ½ cup of ricotta with 1.5 tablespoons of pesto and spread over the dough, leaving a 1-inch border.
  4. Layer the shredded mozzarella on top, followed by cooked chicken, peach slices, and dollops of remaining ricotta.
  5. Bake for 10-12 minutes until the crust is golden brown and the cheese is melted.
  6. Remove from oven and sprinkle with black pepper, arugula, torn basil leaves, and drizzle with balsamic glaze.
