Preparation
- Preheat the oven to 475°F. Prepare a greased baking sheet.
- Shape the pizza dough into a 10-12 inch circle and place on the baking sheet.
- Mix ½ cup of ricotta with 1.5 tablespoons of pesto and spread over the dough, leaving a 1-inch border.
- Layer the shredded mozzarella on top, followed by cooked chicken, peach slices, and dollops of remaining ricotta.
- Bake for 10-12 minutes until the crust is golden brown and the cheese is melted.
- Remove from oven and sprinkle with black pepper, arugula, torn basil leaves, and drizzle with balsamic glaze.
