  • 1 pound lean ground beef 85% or 90% lean
  • 2 cups cooked white rice about 1 cup uncooked
  • 1 can cream of mushroom soup or cream of chicken soup
  • ½ cup milk or beef broth
  • 2 cups cheddar cheese, divided sharp or mixed with Monterey Jack
  • 1 medium onion, diced yellow or white
  • 2 cloves garlic, minced or ½ tsp garlic powder
  • 1 teaspoon paprika smoked paprika for more flavor
  • ½ teaspoon salt to taste
  • ¼ teaspoon pepper to taste

How to Make Cheesy Ground Beef and Rice Casserole
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown 1 pound of lean ground beef along with 1 diced onion for about 5-7 minutes.
  3. Stir in 2 minced garlic cloves and sauté for 30 seconds until fragrant.
  4. In a bowl, whisk together 1 can of cream of mushroom soup, ½ cup of milk or beef broth, 1 teaspoon of paprika, ½ teaspoon of salt, and ¼ teaspoon of pepper.
  5. In a greased 9x13-inch baking dish, combine the cooked rice, beef mixture, and half of the shredded cheese.
  6. Sprinkle the remaining cheese over the top. Cover with foil.
  7. Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes.
  8. Optional: Broil for another 2 minutes for a crispy top.
  9. Serve warm, garnished with fresh chopped parsley if desired.
