How to Make Cheesy Bacon Potato Stacks
  1. Cook the bacon in a skillet over medium heat until crisp, about 5-7 minutes. Pat it dry and dice it into small pieces.
  2. Peel the baking potatoes and slice them into cylinders, then cut thin rounds of about 3mm thick.
  3. In a saucepan, heat the double cream with nutmeg, salt, and black pepper over low heat. Add the sliced potatoes and gently simmer for 3-4 minutes.
  4. Grease a muffin tray with butter. Layer potatoes, then sprinkle bacon and cheese, repeating until you have 7 layers of potato and 3 each of bacon and cheese. Drizzle remaining cream on top.
  5. Cover the muffin tray with foil and bake at 180°C (350°F) for 40 minutes, or until tender.
  6. Uncover, sprinkle with additional cheese, and grill until golden brown on top, about 5-7 minutes.
  7. Allow the stacks to rest for 5-10 minutes before scooping out. Garnish with fresh chives if desired.
