  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1 teaspoon Paprika
For the Stuffing
  • 1 cup Asparagus Trimmed
  • 1 cup Fresh Mozzarella Low-moisture
  • 1/2 cup Sun-Dried Tomatoes in Oil Julienned
For the Pesto
  • 1 cup Fresh Basil Or parsley
  • 2 cups Fresh Spinach
  • 1/2 cup Olive Oil
  • 1/2 cup Parmesan Cheese Freshly shredded
  • 2 cloves Garlic Fresh
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1/4 cup Pine Nuts
Seasonings
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly cracked

Method
 

Instructions
  1. Preheat the oven to 400°F and spray a baking dish with cooking spray.
  2. In a food processor, blend basil, spinach, olive oil, parmesan, pine nuts, garlic, lemon juice, salt, and pepper until smooth.
  3. Cut a slit in each chicken breast, season with paprika, salt, and pepper.
  4. Sear the chicken breasts in a skillet over medium-high heat for 2-3 minutes per side until golden brown.
  5. Place seared chicken in the baking dish and stuff with sun-dried tomatoes, mozzarella, and asparagus.
  6. Bake for 20-22 minutes until chicken is cooked through and cheese is melted.
  7. Remove from oven and top with homemade pesto before serving.
