  • 1 ball Burrata Cheese can substitute with fresh mozzarella
  • 1/2 cup Olive Pesto store-bought or homemade
  • 1/2 cup Zucchini Confit use roasted peppers as a substitute if desired
  • 1 handful Arugula peppery freshness; can replace with spinach
For the Zucchini Confit
  • 2 medium Zucchini sliced thinly
  • 2 tablespoons Olive Oil high-quality
  • 2 cloves Garlic minced
  • 1 teaspoon Lemon Zest

Preparation Steps
  1. Heat a tablespoon of olive oil in a pan over medium heat. Add thinly sliced zucchini and sauté until tender, about 5-7 minutes. Stir in minced garlic and lemon zest for the final minute.
  2. Slice your crusty baguette in half and place it under the broiler or in a toaster oven until golden brown, roughly 3-5 minutes.
  3. Generously spread a layer of olive pesto on the bottom half of the toasted baguette.
  4. Place the creamy burrata onto the pesto, followed by a spoonful of the zucchini confit and a handful of fresh arugula.
  5. Close the sandwich with the top half of the baguette and slice it in half for easier handling. Serve immediately while it’s still warm.
