How to Make Patatas Mozárabes
  1. Peel, wash, and cut Yukon gold potatoes into 2 cm pieces.
  2. Place cut potatoes in a pot, cover with water, season with sea salt, and boil for 15-20 minutes until tender.
  3. Drain cooked potatoes and rinse under cold water to stop cooking.
  4. Combine mayonnaise, grated garlic, Dijon mustard, honey, lemon juice, olive oil, smoked paprika, oregano, cumin, onion powder, sea salt, and black pepper in a bowl. Whisk until creamy.
  5. Once potatoes are cool, arrange on a plate, drizzle with sauce, and garnish with paprika and parsley. Serve immediately.
