Preparation
- Preheat the oven to 325°F (160°C).
- Arrange the mini phyllo shells on a baking sheet.
- Spoon a dab of blackberry jam and drizzle honey into each phyllo cup.
- Top each cup with a cube of brie.
- Bake for 6-8 minutes until the brie is melted and the phyllo shells are lightly browned.
- Remove from the oven and garnish each cup with a fresh blackberry and thyme leaves.
- Drizzle with additional honey if desired and serve immediately.
