Method
 

Preparation
  1. In a bowl, combine fresh blueberries, minced garlic, olive oil, honey, lemon juice, salt, and pepper. Mash some blueberries gently with a fork.
  2. Place bone-in chicken thighs in a resealable bag and pour the marinade over the chicken. Seal and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Arrange the marinated chicken thighs in a baking dish, skin side up, and pour any remaining marinade over the chicken. Bake for 35-40 minutes.
  5. Halfway through cooking, baste the chicken with the pan juices.
  6. Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh thyme and lemon zest before serving.
