  • 1 tbsp Baking Powder Must be fresh
  • 1/2 cup Unsalted Butter Chilled
  • 1/4 cup Sugar Can substitute with natural sweetener
  • 1 tbsp Earl Grey Tea
  • 1 cup Blackberries Can swap with raspberries or blueberries
  • 3/4 cup Buttermilk Substitute with milk and vinegar
  • 1 tbsp Lemon Zest Essential for flavor
For the Lemon Glaze
  • 1 cup Powdered Sugar Adjust for consistency
  • 2 tbsp Lemon Juice Freshly squeezed is best

Method
 

How to Make
  1. Preheat your oven to 400°F (200°C).
  2. Mix together flour, sugar, baking powder, and a pinch of salt in a large bowl.
  3. Cut in the chilled unsalted butter until the mixture resembles coarse crumbs.
  4. Stir in the Earl Grey tea leaves, blackberries, and lemon zest gently.
  5. Add the buttermilk gradually, mixing until a soft dough forms.
  6. Transfer the dough onto a floured surface and knead gently into a disc about 1-inch thick.
  7. Cut the disc into triangles and place on a baking sheet lined with parchment paper.
  8. Chill the cut scones in the freezer for 15 minutes before baking.
  9. Bake the scones for 18-20 minutes until golden brown.
  10. Cool slightly and drizzle with the lemon glaze of powdered sugar and lemon juice.
