Toppings
  • 1 cup Shredded Monterey Jack or Cheddar Cheese Use pepper jack for a spicy kick.
  • 1/2 cup Chopped Red Onion Green onions can be used for a milder taste.
  • 1/4 cup Mild Pickled Jalapenos Feel free to omit for less spice.
  • 1/2 cup Queso Blanco Shredded cheese can substitute if desired.

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine cooked shredded chicken with BBQ sauce.
  3. On a large baking sheet lined with parchment paper, spread half of your tortilla chips.
  4. Spoon half of the BBQ chicken mixture over the chips, then add half of the shredded cheese on top. Repeat with remaining ingredients.
  5. Sprinkle pickled jalapenos and chopped red onions over the layered nachos.
  6. Bake for 11-13 minutes, or until cheese is melted and bubbly.
  7. Remove from the oven and drizzle queso blanco and BBQ sauce on top. Bake for an additional 3-4 minutes.
  8. Serve immediately, garnishing with chopped cilantro.
