- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine cooked shredded chicken with BBQ sauce.
- On a large baking sheet lined with parchment paper, spread half of your tortilla chips.
- Spoon half of the BBQ chicken mixture over the chips, then add half of the shredded cheese on top. Repeat with remaining ingredients.
- Sprinkle pickled jalapenos and chopped red onions over the layered nachos.
- Bake for 11-13 minutes, or until cheese is melted and bubbly.
- Remove from the oven and drizzle queso blanco and BBQ sauce on top. Bake for an additional 3-4 minutes.
- Serve immediately, garnishing with chopped cilantro.
