  • 2 cups shredded chicken leftover or rotisserie chicken
  • 1 cup BBQ sauce your favorite type
  • 2 cups cheese Monterey Jack, or substitute with cheddar or pepper jack
  • 1 medium red onion sliced, or substitute with green onions
  • 1/4 cup cilantro chopped, or substitute with parsley

How to Make BBQ Chicken Quesadillas
  1. Gently heat your BBQ sauce in a small saucepan until warm.
  2. In a bowl, combine the warm BBQ sauce with shredded chicken, stirring until well-coated.
  3. Place a skillet over medium heat to warm it up.
  4. On one tortilla, sprinkle a layer of cheese, followed by BBQ chicken mixture and more cheese, red onions, and cilantro. Top with a second tortilla.
  5. Carefully place the quesadilla into the heated skillet and cook for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes.
  6. Remove from skillet, allow to cool slightly before cutting into wedges. Serve with extra BBQ sauce on the side for dipping.
