For Cooking
  • 2 tablespoons Vegetable Oil Use a neutral oil like canola or sunflower.
  • 2 large Eggs Can be replaced with tofu for a vegan option.
For the Base
  • 2 cups Cooked Rice Leftover rice is ideal, but fresh works too.

Method
 

How to Make Bàn Fàn
  1. In a heatproof bowl, mix together oyster sauce, light soy sauce, sugar, minced garlic, chopped scallion, and cilantro until well combined.
  2. In a small saucepan, heat vegetable oil over medium heat until it starts to smoke slightly, about 2-3 minutes.
  3. Carefully drizzle the hot oil over the aromatics in the bowl, and enjoy the sizzle!
  4. In the same saucepan, crack in the eggs and fry them to your preference.
  5. If using leftover rice, reheat it in a pan or microwave until warm. Add it to the bowl with the prepared sauce and stir until well mixed.
  6. Top your mixed rice with the fried eggs and serve immediately.
