How to Make Baked Whole Halloumi with Apricots and Honey
  1. Preheat the oven: Set your oven to 400°F (200°C fan) for optimal baking.
  2. Slice the apricots: Halve the apricots, remove the stones, and cut them into thick slices. Arrange them in a small oven dish, drizzle with ½ tablespoon of olive oil, and toss well to coat. Bake for 10 minutes until slightly soft.
  3. Prep the halloumi: While the apricots bake, take your block of halloumi and carefully make diagonal cuts down the block, ensuring you don’t cut all the way through.
  4. Add the halloumi: Once the apricots are out of the oven, place the halloumi in the center of the dish. Drizzle with an additional 1 tablespoon of olive oil and massage it into the cuts.
