Ingredients
  

For the Crumble
  • 2 cups Old fashioned rolled oats quick oats can be a softer alternative
  • 1 cup Oat flour make your own by grinding rolled oats
  • 1/2 cup Brown sugar light brown sugar works well for milder flavor
  • 1/2 cup Walnuts (chopped) peanuts or pecans are excellent substitutes
  • 1/2 cup Raisins swap in dried cranberries for a different taste
  • 1 teaspoon Ground cinnamon nutmeg can add a lovely aromatic profile
  • 1/4 teaspoon Ground nutmeg can be omitted if preferred
  • 1/4 teaspoon Kosher salt sea salt is a suitable substitute
  • 1/2 cup Unsalted butter (melted) coconut oil is a great dairy-free option
  • 1 spray Coconut baking spray any non-stick spray can be used if needed
For the Nectarines
  • 6 medium Ripe nectarines peaches can be a delicious substitute
  • 3 tablespoons Salted butter (cut into eighths) can use unsalted with a pinch of salt
For Serving
  • 6 scoops Vanilla ice cream substitute any ice cream flavor that you love

Method
 

Instructions
  1. Preheat the oven to 350℉ (180℃). Line a small rimmed baking sheet with parchment paper.
  2. Combine the oats, oat flour, brown sugar, chopped walnuts, raisins, cinnamon, nutmeg, and salt in a mixing bowl. Stir well.
  3. Pour the melted unsalted butter into the dry ingredients. Mix until completely incorporated.
  4. Spread the crumble mixture onto the prepared baking sheet. Bake for 12-15 minutes, stirring every 5 minutes, until golden brown.
  5. Prepare the nectarines by halving them and placing them cut side up in a baking dish. Dot each half with pieces of salted butter and sprinkle brown sugar on top.
  6. Bake the nectarines on the middle rack for 30-40 minutes, or until tender and caramelized.
  7. Brush any melted brown sugar-butter mixture over the nectarines once they’re out of the oven and let cool slightly.
  8. Serve the warm nectarines topped with a scoop of vanilla ice cream and a sprinkle of the crunchy crumble.
