  • 1/4 cup Honey substitute with maple syrup for a non-honey option
  • 1/4 cup Whole grain mustard spicy brown mustard is a good alternative
  • 2 tablespoons Dijon mustard yellow mustard can be used for a milder flavor
  • 1 teaspoon Salt use sea salt or kosher salt for the best results
  • 3 cloves Garlic (minced) can substitute with garlic powder if needed
For the Chicken
  • 4 pieces boneless skinless chicken breasts you can use chicken thighs, adjusting cooking time
  • Fresh thyme (optional) fresh rosemary or oregano can also be used

Method
 

Directions
  1. Preheat your oven to 400ºF.
  2. Mix the marinade in a mixing bowl by combining olive oil, honey, both mustards, salt, and minced garlic. Stir until smooth.
  3. Pound the chicken breasts lightly to an even thickness.
  4. Coat each chicken breast evenly with the honey mustard sauce.
  5. Arrange the coated chicken in a 9x13 baking dish.
  6. Cover the dish with aluminum foil and bake for 25-30 minutes.
  7. Check if the internal temperature reaches 165ºF for safe consumption.
  8. Garnish optionally with fresh thyme before serving hot.
