  • 2 tablespoons Taco Seasoning store-bought or homemade
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste
  • 1 teaspoon Smoked Paprika or regular paprika if preferred
For the Toppings
  • 1 cup Pico de Gallo or fresh salsa
  • 1/2 cup Guacamole store-bought or homemade
  • 1/2 cup Sour Cream or Greek yogurt for a healthier option
  • 1/4 cup Queso Fresco or feta as a substitute
  • 1/4 cup Cilantro or parsley if preferred

Method
 

Preparation Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Prep the sweet potatoes by scrubbing and cubing them. Toss the cubes with olive oil, salt, and pepper.
  3. Roast the sweet potatoes on a baking sheet for 35-45 minutes until fork-tender and golden, stirring halfway through.
  4. Cook the ground turkey in a skillet over medium-high heat for about 4-5 minutes until no pink remains.
  5. Season the turkey with taco seasoning, smoked paprika, salt, and pepper. Stir and cook for an additional 1-2 minutes.
  6. Assemble the bowls by dividing the roasted sweet potatoes into serving dishes and gently mash them.
  7. Top each bowl with cooked turkey, sour cream, pico de gallo, guacamole, queso fresco, and cilantro.
