Preparation
- Preheat your oven to 180°C (350°F).
- Season the cod fillets with salt and pepper on both sides.
- In a skillet, heat a tablespoon of olive oil over medium heat and sauté the chopped onions until soft, about 3-4 minutes.
- Mix in freshly minced garlic and grated ginger, stirring for an additional minute.
- Pour in the coconut milk along with fresh lemon juice and lemon zest, and let it simmer for 2-3 minutes.
- Place the seasoned cod fillets in a baking dish and pour the coconut-lemon sauce over them.
- Transfer to the oven and bake for 20-25 minutes until the cod is opaque and flakes easily.
