Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Season the cod fillets with salt and pepper on both sides.
  3. In a skillet, heat a tablespoon of olive oil over medium heat and sauté the chopped onions until soft, about 3-4 minutes.
  4. Mix in freshly minced garlic and grated ginger, stirring for an additional minute.
  5. Pour in the coconut milk along with fresh lemon juice and lemon zest, and let it simmer for 2-3 minutes.
  6. Place the seasoned cod fillets in a baking dish and pour the coconut-lemon sauce over them.
  7. Transfer to the oven and bake for 20-25 minutes until the cod is opaque and flakes easily.
