How to Make Air Fryer Lasagna Fritta
- Boil lasagna noodles in salted water until al dente; cool and rinse under cold water.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, Romano, Asiago, eggs, and Italian seasoning. Mix until creamy.
- Lay each noodle flat, spread cheese mixture along one edge, and roll into 2-3 inch pieces. Freeze for 1-2 hours.
- Mix olive oil with breadcrumbs until combined. Microwave for 1-2 minutes until lightly browned, then cool.
- Beat remaining eggs in a shallow dish. Dip each frozen lasagna roll into egg wash, then coat with breadcrumbs.
- Preheat air fryer, spray the basket with oil, place rolls inside, spray tops with oil, and cook at 400°F for 8 minutes. Flip and cook another 6-8 minutes.
- For extra crispiness, pan-fry the frittas for about 2 minutes on each side until golden brown.
- Serve with marinara sauce for dipping.
