How to Make Air Fryer Lasagna Fritta
  1. Boil lasagna noodles in salted water until al dente; cool and rinse under cold water.
  2. In a mixing bowl, combine ricotta, mozzarella, Parmesan, Romano, Asiago, eggs, and Italian seasoning. Mix until creamy.
  3. Lay each noodle flat, spread cheese mixture along one edge, and roll into 2-3 inch pieces. Freeze for 1-2 hours.
  4. Mix olive oil with breadcrumbs until combined. Microwave for 1-2 minutes until lightly browned, then cool.
  5. Beat remaining eggs in a shallow dish. Dip each frozen lasagna roll into egg wash, then coat with breadcrumbs.
  6. Preheat air fryer, spray the basket with oil, place rolls inside, spray tops with oil, and cook at 400°F for 8 minutes. Flip and cook another 6-8 minutes.
  7. For extra crispiness, pan-fry the frittas for about 2 minutes on each side until golden brown.
  8. Serve with marinara sauce for dipping.
