  • 1 teaspoon Dried Oregano You can use Italian seasoning.
  • 1 teaspoon Dried Basil Fresh basil is a great alternative.
For the Cheese Topping
  • 1.25 cups Shredded Mozzarella Cheese Gouda or cheddar can be used.
  • 0.25 cups Grated Parmesan Cheese Consider nutritional yeast for a vegan option.
Garnish (optional)
  • Fresh Basil or Parsley Feel free to mix in whatever herbs you have on hand.

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté diced onion for 4-5 minutes until soft and fragrant. Add minced garlic and sauté for another minute until golden.
  3. Gently stir in crushed tomatoes, dried oregano, and basil. Season with salt and pepper. Allow to simmer for about 5 minutes.
  4. Stir in rinsed cannellini beans and cook for an additional 2-3 minutes until heated through.
  5. Transfer the mixture into a greased 9x9-inch baking dish. Sprinkle shredded mozzarella and parmesan cheese on top.
  6. Place in the preheated oven and bake for 20-25 minutes until the cheese is melted and golden.
  7. Let cool for a few minutes, garnish with fresh herbs, and serve warm.
