- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté diced onion for 4-5 minutes until soft and fragrant. Add minced garlic and sauté for another minute until golden.
- Gently stir in crushed tomatoes, dried oregano, and basil. Season with salt and pepper. Allow to simmer for about 5 minutes.
- Stir in rinsed cannellini beans and cook for an additional 2-3 minutes until heated through.
- Transfer the mixture into a greased 9x9-inch baking dish. Sprinkle shredded mozzarella and parmesan cheese on top.
- Place in the preheated oven and bake for 20-25 minutes until the cheese is melted and golden.
- Let cool for a few minutes, garnish with fresh herbs, and serve warm.
